GOTT Napa Valley Cabernet Sauvignon 2019
Description
Our GOTT 2019 Napa Valley Cabernet Sauvignon has aromas of boysenberry and blackberry pie with notes of baking spices and toasted oak. On the palate, the wine opens with dark fruit flavors followed by soft, velvety tannins on the mid-palate, which are balanced by an elegant structure and long finish.

Vineyard
We selected our Cabernet Sauvignon fruit from hillside vines in southeast Napa where the cool, foggy mornings and evenings allow for longer hang time resulting in well-developed fruit flavors, and well-balanced tannins and acidity in the wine. A small amount of Merlot helps complement the varietal’s characteristics of Cabernet Sauvignon by softening the powerful tannins. Rounding out the blend, Syrah and Petite Sirah add dark fruit flavors and texture to the wine.
Vinification
The 2019 growing season was long and even, with moderate winter rains resulting in a later than usual bud break. Cool spring temperatures followed by a warm summer and fall, allowed us to pick our fruit in October. These conditions allowed fruit to ripen evenly at a steady pace, making for a well-balanced wine.
Maturation
Following harvest, the wine was fermented at warmer temperatures with frequent pump overs to help add to the mouthfeel bringing out rich, fruit flavors. The wine was then aged for 24 months in 100% new French oak
